Balanced enzyme formula
Enzymenformule Pro is a balanced formula with several types of enzymes, including enzymes that break down carbohydrates, proteins, and fats.
The product contains an enzyme complex, BioCore® Optimum Complete, combined with a special gluten-splitting enzyme called Tolerase® G.
Gluten are proteins that occur naturally in certain grains, such as wheat, rye, and barley. Because gluten are rich in the amino acid proline, they can be difficult to break down.
Enzymenformule Pro can be used with every meal and is suitable for vegetarians and vegans.
How enzymes work
The word enzyme comes from the Greek word 'enzymos', which means 'in yeast'.
An enzyme is a protein that can support a specific chemical reaction without being consumed or changing shape itself.
It can split certain substances, such as those in food, into smaller building blocks.
Each enzyme has a specific acidity level, or pH, and a temperature at which its activity works best.
Different enzymes and activities
Enzymenformule Pro contains several enzymes, each with its own function. The table below gives an overview.
For enzymes, amounts are usually not expressed in milligrams or grams, but as a specific enzyme activity.
What matters is not how much an enzyme weighs, but how well and how quickly it can split a certain substance.
This is reflected in the enzyme activity.
How activity is measured
International guidelines describe how the activity of each enzyme should be measured and how it should be shown on the label.
The unit of measurement differs per enzyme. The different abbreviations refer to the method used to determine the activity of that specific enzyme.
One example is DU, short for Dextrinizing Unit. This shows how well and how quickly a specific amylase breaks down starch into shorter carbohydrate chains, called dextrins.
The higher the stated value, the stronger the enzyme activity.
How the enzymes are produced
There are different types of enzymes on the market. They can come from animal sources, plants, or micro-organisms.
BioCore® Optimum Complete from Deerland and Tolerase® G from DSM are both produced through a fermentation process using micro-organisms such as yeasts.
These micro-organisms are grown on a nutrient medium. Through fermentation, they convert the nutrients in that medium into enzymes.
Micro-organisms have specific preferences for the nutrient medium on which they grow best.
Use of wheat and soy
For the production of BioCore® Optimum Complete, some wheat and soy are needed during fermentation as part of the nutrient medium.
After the fermentation process, the enzymes produced are carefully filtered by Deerland to remove as much of the remaining wheat and soy as possible.
Still, a very small amount may remain in the final product. That is why this is stated on the label.
